Shrimp Burgers

Ingredients:
5 pounds shrimp or shrimp pieces, peeled and de-veined
1 bunch fresh tarragon, chopped
1 1/2 medium red onions, chopped
15 garlic cloves
1/4 cup mayonnaise
Dry bread crumbs, Japanese
2 cups seasoned flour
1 cup vegetable oil

Directions:
In a food processor, puree shrimp, tarragon, onion and garlic. Combine pureed mixture with mayo and enough bread crumbs to bind mixture. Form into 6 ounce patties.

Heat oil in large skillet to 350 degrees. Dust patties in seasoned flour and cook for 5 minutes on each side. Finish in oven for 5 to 10 minutes.

Serve with favorite bread and Sriracha mayo.


Yield: 10 servings
