Pan-Seared Mahi-Mahi in Lobster Sauce with Toasted Macademia Nuts

Ingredients:
1/4 cup macadamia nuts, crushed and toasted
8 ounces lobster meat, minced
4 ounces bacon, cut into 2 inch pieces
1 small carrot, peeled and rough chopped
1 small onion, rough chopped
2 celery stalks, rough chopped
1/4 cup fresh basil, chopped
2 tablespoons fresh thyme, chopped
1/2 cup plum tomato puree
1 1/2 cups heavy cream
2 tablespoons lobster base
4 7-ounce mahi fillets
2 ounces olive oil
1 tablespoon kosher salt
Fresh ground black pepper, to taste

Directions:
Render bacon until cooked. Add celery, carrots and onions. Cook until soft. Add basil and thyme, toss. Add heavy cream, tomato puree and lobster base. Simmer 5 to 7 minutes and strain. Add minced lobster to strained sauce.

Season mahi fillets with salt and pepper, pan sear for 5 minutes on each side. Serve with lobster sauce and top with macadamia nuts.


Yield: 4 servings
