Fried Oysters with Goat Cheese

Ingredients:
Oysters:
1 quart vegetable oil
24 favorite oysters, shucked and shells discarded
4 ounces goat cheese
1 pound sautéed spinach
4 lemons, quartered
Club soda batter

Club Soda Batter:
1 cup club soda
3/4 cup flour

Directions:
Heat oil in heavy skillet (375 degrees). To make batter, whisk together club soda and flour until it forms a paste. Dip oysters in batter and fry in oil until golden brown, about 30 to 40 seconds.

Remove oysters from oil with slotted spoon and drain on paper towel. Serve with sauteed spinach and lemon wedges. Top with pieces of goat cheese.


Yield: 4 servings
