Watermelon Salsa

Ken Gladysz, Executive Chef at The Hotel Hershey

Ingredients:
1 English cucumber, cut in half, lengthwise, and sliced
1 red onion, peeled and sliced thin
1 1/2 cups watermelon, flesh, medium dice
1 Jalapeno pepper, seeded and finely chopped
1 garlic glove, finely chopped
1 tablespoon fresh mint, chopped
1 tablespoon fresh chives, chopped
1 lime, freshly squeezed
Salt and pepper, to taste

Directions:
Place cucumber, onion, jalapeno, garlic, mint, chives, lime juice and watermelon in bowl, gently mix. Season with salt and pepper, gently mix. Taste and adjust seasoning if necessary. Serve immediately.


Yield: 8 servings
